Cold Sesame Noodles

If you love spicy noodles but it’s hot outside, this delicious Cold Sesame Noodles recipe is perfect for you. Nutty, sweet / spicy, refreshing and ready in under 10 minutes!

Ingredients
  

  • 500 grams of any type of wheat noodles the chef used thin egg wheat noodles
Dressing
  • 2 tablespoons toasted sesame paste or tahini
  • 1 tablespoon peanut butter
  • 3 tablespoons Chinese black vinegar (or 2 tablespoons balsamic vinegar and 1 tablespoon lime or lemon juice
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 tablespoons hot water
  • 1 tablespoon chilli oil or 2 tablespoons depending on how spicy you would like it
  • 1 teaspoon garlic grated
  • 1 teaspoon ginger grated
  • 1 teaspoon MSG *Optional
Garnish
  • 1 medium cucumber cut into matchsticks
  • 3 hardboiled eggs
  • 1 teaspoon sesame seeds white or black
  • 2 tablespoons chopped coriander
  • 1 tablespoon toasted peanuts crushed or roughly chopped
  • 1 teaspoon chilli oil *optional

Method
 

  1. cook the noodles according to the packet instructions. Drain and plunge into ice cold water. The colder the better, use ice cubes along with cold water.
  2. In a large bowl add all the dressing ingredients and whisk until combined.
  3. Drain the noodles from the ice bath and coat well with the dressing.
  4. To serve, place the cold noodles in a bowl and garnish with the garnish ingredients. If you like it spicy drizzle with more chilli oil.
