Ingredients
  

  • 4 cucumbers
Dressing
  • 1 tablespoon soy sauce
  • 1 tablespoon chinese black vinegar / malt vinegar you can also use Apple Cider Vinegar or any dark vinegar
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon freshly chopped chillies optional (the chef has used red chillies)
  • 1 tablespoon toasted sesame seeds
  • 2 tablespoons spring onion finely chopped
  • 1 tablespoon honey
  • salt and pepper to taste

Method
 

  1. Smash the cucumbers with a rolling pin or the back of pan or a cleaver.
  2. Once smashed, roughly chop into smaller pieces.
  3. Sprinkle with a pinch of salt, toss and set aside for 20 minutes to let it drain.
  4. Mix all the dressing ingredients together and check and adjust seasoning.
  5. Once the cucumbers have drained mix the dressing ingredients into the cucumbers and serve.
