What is Thai style mushroom stir fry?
This 5 ingredient Thai-style mushroom stir fry combines earthy mushrooms, fiery bird’s eye chillies, and roasted peanuts in a toasted sesame oil dressing. Bursting with umami, salty, and spicy notes, it’s a simple yet restaurant-worthy dish you can make in under 5 minutes.
You’ll love it if…
…you want a quick, no-fuss stir-fry that delivers big on spice, saltiness, and deep, savoury depth.

The life of a side dish is hard. Its like being a sidekick to a superhero… like Robin to Batman. Batman gets all the cool lines and you’re stuck saying rubbish like “leaping lizards Batman!”
Well not this time, Batman. This Thai style mushroom stir fry is no side kick, definitely no comic relief character. It’s so good, its beating up the bad guys, its solving the crime, its keeping the streets clean all by itself.
Just peanuts, toasted sesame oil and birds eye chillies. Nothing fancy. But sometimes the best gifts come in non-fancy packages. Nobody puts mushrooms in the corner.

Gather the Ingredients

Sear the Mushrooms
Heat a wok until smoking, add oil, and let it smoke. Add chopped mushrooms and let them sear without stirring for a minute.
Season with salt and pepper, then sauté continuously on high heat. Add chopped chilies, garlic, and crushed toasted peanuts, stirring for a few minutes.

Final Touches and Serving
Turn off the heat, drizzle with toasted sesame oil, mix well, and serve immediately.

- Use High Heat: Stir-fry the mushrooms over high heat to quickly sear them, locking in their juices and caramelising them.
- Avoid Overcrowding the Pan: Cook the mushrooms in batches if necessary to ensure they sauté rather than steam.
- Do not Disturb: After you have added the mushrooms to the hot pan, let it sit for a minute without stirring to sear the mushrooms.
- Optionally Finish with Fresh Herbs and Citrus: Toss in a handful of Thai basil or parsley just before serving to add a burst of freshness that complements the earthy mushrooms. Just before serving, squeeze some fresh lime juice over the mushrooms to brighten the flavours and balance the richness of the sesame oil and peanuts.
